Plan ahead. Source It Out: Charcuterie and Antipasti for Big Holiday Events

Somewhere in the hills outside Parma, Italy a ham is hanging quietly in the dark. It’s been there aging for years, just waiting for its moment.
Farther west a flock of Merino sheep is wandering the high plains of central Spain, providing the milk for cheese that won’t be ready for months.
And down in the chilly waters of the south Atlantic, a fishing boat is hauling in Patagonian red shrimp and freezing them before they ever see land.
That’s what goes on behind the scenes, long before all the hubbub of big holiday parties.
This time of year every caterer, hotel chain and cruise line in the country is planning holiday events with similar menus.
They all want good prosciutto, some hard and some soft cheese, and plump shrimp for the raw bar. But producers can only cure so many hams and age so many wheels of cheese, and once a season’s allocation is spoken for, it’s spoken for.
When you wait too long you get a poor substitute at a premium price. Or an apology. Sometimes both.
A Channel Ambassador helps you stay ahead of the game by pulling products together from around the world, ahead of time.
It starts with a simple conversation: What are you planning? What’s your vision or theme for the event? How many guests? What do you want people taking pictures of, or talking about on the way home?
Then we start sourcing it with you, piece by piece. One fine ingredient at a time.
It often begins with ham, because every great charcuterie board needs an anchor. On one end, the classic di Parma Prosciutto. Made from just pork and sea salt, dry-aged in the hills of northern Italy, sliced so thin you can read through it. It’s the name guests recognize, and the one they reach for first.
On the other end, a Spanish counterpoint: Casa Flores Serrano ham.
Leaner, a little more rustic, with that deep, savory flavor the Spaniards have been perfecting for centuries. Put the two side by side and suddenly the table tells a story. Italy on the left, Spain on the right, and a reason for guests to taste both.
Then comes the cheese. Maybe you planned on Manchego, like everybody else. We suggest Santa Marta Meseta instead. It’s made in the Manchego style, from Spanish sheep that graze the high central plain called the Meseta. Rich, nutty and just a little salty, it holds its own next to the Serrano, plays beautifully with honey and figs, and gives you something the competitors probably won’t have.
And for the antipasto station, the showstopper: Argentine red shrimp.
Wild-caught in the ice-cold South Atlantic and frozen at sea, they’re famously sweet and tender, with a flavor comparable to lobster. Chilled on ice, tossed in a citrus antipasto salad or seared with garlic and olive oil, they turn a buffet into an Instagram-worthy moment. And because they arrive frozen, they can be stocked ahead and pulled as needed. No last-minute fish market panic.
With the menu set, the real work happens behind the scenes. The Channel Ambassador confirms volumes with producers while allocations are still open. We work with the distributor so product is staged and ready before the first December truck rolls.
And because we know which items run tight every year, we pick a backup for each one now, over coffee, instead of on the loading dock.
Fast-forward to that big event in December. The ballroom doors open. Seven hundred guests drift toward the buffet tables. Plates fill up. Phones come out. Somebody asks the server where the cheese is from.
Back in the kitchen, the director of F&B is… calm. Nothing went missing. Nothing got swapped. Nobody spent Thursday night calling every supplier in the state in a panic.
That’s the story we’d love to write with you. Whether you’re a caterer juggling a dozen holiday parties, a hotel chain building banquet menus across multiple properties or a cruise line provisioning for holiday sailings, the formula is the same. Tell us early. We’ll source it out, line it up and get it where it needs to go.
The calendar is filling up, and so are producer allocations. Call your Ambassador team today and let’s build your holiday spread while the best product is still on the table.
