Ammerlander Tilsiter: One cheese, many uses, zero compromise.

A lot of food service operators treat cheese as a commodity. But when you buy on price alone you’re missing a great opportunity to differentiate yourself and delight your diners.
They won’t know you went with an authentic Tilsit. They won’t be able to pinpoint the unique flavor, or name the cheese, but they will be coming back for more.
Ammerlander Tilsiter is the real deal… a semi-soft cheese, similar to harvarti, imported from Germany and made the same way it's been made for 150 years.
With tiny little "eyes," a soft creamy body, and a flavor that's distinctly tangy but not sharp, it does a lot of things well. It’s a workhorse of European kitchens, but it's hard to find in the U.S., which is part of why we like carrying it.
If you're stocking deli cases for a chain of stores, building a new SKU on a manufacturing line, or feeding thousands of people a day on a cruise ship, you need cheese that tastes great and performs consistently, every time, at scale.
Younger Tilsit is softer and melts easier, so that's the one you want for cooking. The fat and moisture come together smoothly instead of separating, so you don't end up with anything greasy or stringy.
That's why it works so well in grilled cheese, in a cheese sauce over pasta or vegetables, or baked into a gratin. It also holds its own in fondue or raclette, with a little more tang than the Gruyère or Emmental you'd usually reach for. It also has more personality than a plain Gouda.
Let it age a bit longer and the flavors intensify. It gets bolder, which is good next to cured meats on a charcuterie board, where you want it to stand out instead of blend in. Crumble it on salads or over roasted vegetables.
Either way, Tilsit cheese plays nicely with the usual German pairings: rye bread, a good mustard, pickles, onion, apples or pears, walnuts, a cold beer and cured meats.
For retail chains Ammerlander Tilsiter is something a little different for the case, backed by real history, and it comes in a size built for how a chain actually moves cheese — a year of shelf life, 4/6.5 lb packs, not a small wheel meant for one counter.
Manufacturers are also starting to use our Tilsiter as an ingredient in sandwiches, sliced for grab-and-go, shredded into ready-to-heat meals, or built into charcuterie kits. It holds up through processing and reheating, so it performs the same whether you're running a small batch or a full line.
Here’s a comforting side dish that works on a buffet line just as well as it does at home. The potatoes go soft and creamy in the oven, and the Tilsit gives it a richer, more savory flavor than you'd get from other cheese options.
Cheesy Tilsit Potato Gratin
Ingredients:
- 2 pounds potatoes, peeled and thinly sliced
- 1 cup heavy cream
- 1 cup grated Ammerlander Tilsiter
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 1/4 cup breadcrumbs
Instructions:
- Preheat oven to 375°F (190°C).
- In a large bowl, combine the sliced potatoes, heavy cream, Tilsit, Parmesan, garlic, thyme, salt, and pepper. Toss to coat evenly.
- Transfer the mixture to a greased baking dish and sprinkle the breadcrumbs evenly over the top.
- Bake for 45–60 minutes, or until the potatoes are tender and the top is golden brown. Let rest for a few minutes before serving.
Scale it up by keeping the ratios the same and swapping the baking dish for a hotel pan or a sheet tray, adjusting the bake time a bit for the extra depth. Good next to roasted meat or grilled fish, or on its own as a vegetarian option. It's a nice example of how the same cheese can show up on a steam table, a room-service tray, and a retail case without you having to juggle different suppliers.
